Kitajima farm pork, Yoichi, Hokkaido Raised in an area blessed with nature, this pork not only has a strong flavor, but the fat doesn’t smell bad when it cools. Less fat is left on the surface of the soup when using this pork for shabu-shabu, and it has a light flavor.
